Do not wait too long to harvest because they will become wrinkly and tough

Harvest whenever they seem to be the right size (there is a variety of colors)

Use a knife to cut peppers off the plant when harvesting
Cucumber

Harvest when cucumbers are about 6 inches long

Use a knife to cut the cucumber off the plant
Baby Watermelon

Add a layer of dirt from compost bin around the base of the plant every 3 weeks

If more than 2 fruits grow on one vine, remove the extras so that only 2 grow
